'is laid out' indicates an anagram.
'at' means one lot of letters go next to another (I've seen this in other clues).
'midnight' becomes 'g' (the middle letter in 'night').
'meal' with letters rearranged gives 'leam'.
'leam' after 'g' is 'GLEAM'.
