I believe the answer is:

brioche

I'm a little stuck... Click here to teach me more about this clue!

'roll' is the definition.
(brioche is a kind of roll)

'sign murray's impatient wanting to tuck into cheese' is the wordplay.
I cannot quite understand how this works, but
'sign' could be 'he' (he is a kind of sign) and 'he' is found within the answer.
This explanation may well be incorrect...

Can you help me to learn more?

(Other definitions for brioche that I've seen before include "Type of light soft roll" , "Soft roll sometimes mixed with currants" , "Sweet french roll" , "Idol" , "Soft loaf, rich with butter and eggs" .)
