I believe the answer is:

megabucks

I'm a little stuck... Click here to teach me more about this clue!

'money' is the definition.
(I know that megabucks is a type of money)

'a county going after prize turned over huge sum' is the wordplay.
'a county' becomes 'bucks' (I've seen this before).
'going after' means one lot of letters go next to another.
'prize turned over huge sum' becomes 'mega' (I can't justify this - if you can you should give a lot more credence to this answer).
'bucks' after 'mega' is 'MEGABUCKS'.

'of' is the link.

Can you help me to learn more?

(Other definitions for megabucks that I've seen before include "Loads of money" , "Vast sums of money" , "Many grand" , "Huge money" , "large sum of money" .)

I've seen this clue in The Telegraph.
