Crossword Genius

A flavouring, free from Spain, for savoury jelly (5)

Ross

I believe the answer is:

aspic

I'm a little stuck... Click here to teach me more about this clue!

'for savoury jelly' is the definition.
(I've seen this before)

'a flavouring free' is the wordplay.
'flavouring free' becomes 'spic' (I can't justify this - if you can you should give a lot more credence to this answer).
'a'+'spic'='ASPIC'

'from spain' is the link.
I am not very happy about this link. Some or all of it may be part of another bit of the clue.

Can you help me to learn more?

(Other definitions for aspic that I've seen before include "Ending of Marlowe's thriller" , "Stock set with food" , "garnish" , "stock production" , "Savoury jelly for coating meat, eggs etc" .)

I've seen this clue in The Telegraph.
