Crossword Genius

After metamorphosis, Samsa leaves (5)

Ross

I believe the answer is:

assam

I'm a little stuck... Click here to teach me more about this clue!

'after metamorphosis' is the definition.
Although both the answer and definition are singular nouns, I cannot see how they can define each other.

'samsa leaves' is the wordplay.
'samsa' anagrams to 'ASSAM'.
However, I am not sure how this is indicated.

Can you help me to learn more?

(Other definitions for assam that I've seen before include "North-east Indian tea state" , "place associated with tea" , "Indian state known for its tea production" , "brew?" , "Type of tea" .)

I've seen this clue in The Independent.
