'mousetrap' can be an answer for 'cheese' (I've seen this before). I am not sure about the 'here?' bit.

'after second service slice flipping' is the wordplay.
'after second' becomes 'mo' (both are short periods of time. I am not sure about the 'after' bit.).
'service' becomes 'use' (to be of service is to be of use).
'slice' becomes 'part' (I've seen this in another clue).
'flipping' shows that the letters should be reversed in order.
'part' back-to-front is 'trap'.
'mo'+'use'+'trap'='MOUSETRAP'
