'foxtrot with ginger' is the wordplay.
'foxtrot' becomes 'f' (phonetic alphabet: alpha, bravo, charlie etc.).
'with' is a charade indicator (letters next to each other).
'ginger' becomes 'red ginger' (red hair).
'f'+'red'='FRED'

(Other definitions for fred that I've seen before include "Man" , "- - Hoyle, astronomer" .)
