Ross

I believe the answer is:

tyrolese

I'm a little stuck... Click here to teach me more about this clue!

'austrian' is the definition.
Both the answer and definition are adjectives. Perhaps there's an association between them I don't understand?

'parts around which you've yet to go cycling' is the wordplay.
I cannot quite see how this works, but
'parts' could be 'roles' (parts in a play) and 'roles' is located in the answer.
an anagram of 'yet' is 'tye' which is located in the remaining letters.
No letters remain.
This may be the basis of clue (or it may be nonsense).

Can you help me to learn more?

(Other definitions for tyrolese that I've seen before include "of Austrian mountains" , "of Austrian region" , "Relating to an Alpine region" .)

I've seen this clue in The Guardian.
