Although both the answer and definition are singular nouns, I cannot understand how one could define the other.

'bar nuts etc on' is the wordplay.
'bar' becomes 'inn' (both can mean a drinking establishment).
'nuts' indicates an anagram (nuts can mean crazy).
'etc'+'on'='etcon'
'etcon' with letters rearranged gives 'ocent'.
'inn'+'ocent'='INNOCENT'
