Although both the answer and definition are nouns, they are not in the same form of the noun.

'bob dreads' is the wordplay.
'bob' becomes 'hairdo' (bob is a type of hairdo).
'dreads' becomes 's' (I can't justify this - if you can you should believe this answer much more).
'hairdo'+'s'='HAIRDOS'

(Another definition for hairdos that I've seen is " Mohicans".)
