(I've seen this in another clue)

'at hotel too' is the wordplay.
'at' says to put letters next to each other.
'hotel' becomes 'h' (phonetic alphabet).
'too' becomes 'and' (I've seen this in another clue).
'h' next to 'and' is 'HAND'.
