Crossword Genius

Cheese produced to the north (4)

Ross

I believe the answer is:

edam

'cheese' is the definition.
(I know that Edam is a type of cheese)

'produced to the north' is the wordplay.
'produced' becomes 'made' ('make' can be a synonym of 'produce').
'to the north' is a reversal indicator (in a down clue, letters go up or 'northward').
'made' written backwards gives 'EDAM'.

(Other definitions for edam that I've seen before include "Made into popular cheese" , "Spherical cheese" , "milk product" , "Dutch 8 across" , "Sphere of Dutch cheese" .)

I've seen this clue in The Times.
