Crossword Genius

Climber established restaurant (3)

Ross

I believe the answer is:

ivy

I'm a little stuck... Click here to teach me more about this clue!

This could be a double definition.

'climber' is the first definition.
(ivy is a climbing plant)

'established restaurant' is the second definition.
Although both the answer and definition are singular nouns, I cannot see how they can define each other.

Can you help me to learn more?

(Other definitions for ivy that I've seen before include "Creeper plant" , "Clinging, parasitical plant" , "Old World vine" , "Evergreen creeping plant" , "The Hedera genus of evergreen climbers" .)

I've seen this clue in The Irish Times.
