I believe the answer is:

rainbow

I'm a little stuck... Click here to teach me more about this clue!

'colourful display' is the definition.
(spectrum of colours)

'of east end artist' is the wordplay.
I cannot quite understand how this works, but
'of' could be 'o' and 'o' is found within the answer.
'artist' could be 'ra' (Royal Academician, member of Royal Academy of Arts) and 'ra' is present in the answer.
This explanation may well be incorrect...

Can you help me to learn more?

(Other definitions for rainbow that I've seen before include "heavenly sight" , "Wide range of colours" , "I won bra (anag.)" , "Spectrum in the sky" , "an impossible dream being chased?" .)

I've seen this clue in The Times.
