I believe the answer is:

iceberg

I'm a little stuck... Click here to teach me more about this clue!

'confection an unemotional type' is the definition.
Although both the answer and definition are singular nouns, I can't see how one could define the other.

'composer after frozen' is the wordplay.
'composer' becomes 'Berg' (Alban Berg, 1885 - 1935).
'after' says to put letters next to each other.
'frozen' becomes 'ice' (I've seen this in other clues).
'berg' after 'ice' is 'ICEBERG'.

Can you help me to learn more?

(Other definitions for iceberg that I've seen before include "Largely hidden danger" , "last scene of Titanic" , "Danger to shipping" , "main danger" , "Wrecker of Titanic" .)

I've seen this clue in The Times.
