Countryman, fifty, into sex and booze (8)

I believe the answer is:
villager
'countryman' is the definition.
The definition and answer can be both people as well as being singular nouns.
Perhaps they are linked in a way I don't understand?
'fifty into sex and booze' is the wordplay.
'fifty' becomes 'l' (Roman numeral).
'into' means one lot of letters goes inside another.
'sex' becomes 'VI' (VI in Roman numerals - 'sex' is 'six' in Latin).
'and' says to put letters next to each other.
'booze' becomes 'lager' (I can't explain this - if you can you should believe this answer much more).
'vi'+'lager'='vilager'
'l' inserted into 'vilager' is 'VILLAGER'.
Can you help me to learn more?
(Other definitions for villager that I've seen before include "All-giver? (anag)" , "Country dweller" , "Small town dweller" , "Hamlet character" , "Rural dweller" .)
