'sun at the end of the day?' is the wordplay.
'sun at' becomes 'set' (I am not sure about this - if you are sure you should believe this answer much more).
'the' becomes 't' (the is pronounced as a 't' sound in some dialects).
'end of' says to hollow out the word (remove centre letters) (I've seen 'ends of' mean this).
'the day?' becomes 'Easter' (Easter is an example).
'easter' with its middle removed is 'er'.
