Crossword Genius

Cut of meat exhibited by lawyer on piece of cloth (5)

Ross

I believe the answer is:

scrag

I'm a little stuck... Click here to teach me more about this clue!

'cut of meat' is the definition.
(scrag is a kind of cut of meat)

'exhibited by lawyer on piece of cloth' is the wordplay.
I cannot quite understand how this works, but
'piece' could be 'rag' (I have seen 'Piece of cloth ' mean 'rag' so perhaps 'piece' could also mean 'rag') and 'rag' is found within the answer.
This explanation may well be incorrect...

Can you help me to learn more?

(Other definitions for scrag that I've seen before include "Poor quality meat - throttle" , "Lean end of mutton neck" , "Bony part of the neck" , "Collar" , "The inferior end of a neck of mutton" .)

I've seen this clue in The Irish Times.
