Crossword Genius

Delivered Middle Eastern folk's items from dairy (5)

Ross

I believe the answer is:

curds

I'm a little stuck... Click here to teach me more about this clue!

'items from dairy' is the definition.
Although both the answer and definition are plural nouns, I don't see how they can define each other.

'delivered middle eastern folk's' is the wordplay.
'delivered' shows a homophone (sound like) (delivered verbally).
'middle' becomes 'see' (see is a kind of middle).
'eastern folk' becomes 'urds' (I can't explain this - if you can you should believe this answer much more).
'see' sounds like 'c'.
'c'+'urds'='CURDS'

Can you help me to learn more?

(Other definitions for curds that I've seen before include "Coagulated milk, used to make cheese" , "Golfing attendant" , "Basis for making cheese" , "Coagulated milk particles" , "Solids in coagulated milk" .)

I've seen this clue in The Independent.
