'tipples' is the definition.
Although both the answer and definition are plural nouns, I cannot see how one could define the other.

'doctors go without morning' is the wordplay.
I cannot quite understand how this works, but
'morning' could be 'am' (as in 12:00 AM) and 'am' is present in the answer.
'doctors' could be 'drs' ('Dr' can be a synonym of 'doctor') and 'drs' is found within the leftover letters.
This accounts for all the letters.
This explanation may well be incorrect...
