Crossword Genius

England almost besotted with it, a cold dish (9)

Ross

I believe the answer is:

galantine

'dish' is the definition.
(galantine is a kind of dish)

'england almost besotted with it a cold' is the wordplay.
I cannot quite understand how this works, but
'england' could be 'e' and 'e' is found within the answer.
'it' could be 't' (abbreviation. e.g. in 'tis) and 't' is present in the answer.
'a' could be 'an' and 'an' is found in the answer.
This explanation may well be incorrect...

I've seen this clue in The Guardian.
