I believe the answer is:

outdoorsy

I'm a little stuck... Click here to teach me more about this clue!

'enjoying the open' is the definition.
I can't judge whether this defines the answer.

'air excel around stables perhaps leaving husband' is the wordplay.
I cannot quite see how this works, but
'air' could be 'outdoors' (synonyms) and 'outdoors' is located in the answer.
'perhaps' could be 'y' (I've seen this in other clues) and 'y' is found within the answer.
No letters remain.
This explanation may well be incorrect...

Can you help me to learn more?

(Other definitions for outdoorsy that I've seen before include "for going out a lot" , "not fit for buildings?" .)

I've seen this clue in The Independent.
