Although both the answer and definition are plural nouns, I can't understand how one could define the other.
'essayist's woolly' is the wordplay.
'essayist' becomes 'lamb' (I've seen this before).
'woolly' becomes 's' (I can't justify this - if you can you should believe this answer much more).
'lamb'+'s'='LAMBS'
