Essayist's woolly jumpers? (5)

Ross

I believe the answer is:

lambs

I'm a little stuck... Click here to teach me more about this clue!

'jumpers?' is the definition.
Although both the answer and definition are plural nouns, I can't understand how one could define the other.

'essayist's woolly' is the wordplay.
'essayist' becomes 'lamb' (I've seen this before).
'woolly' becomes 's' (I can't justify this - if you can you should believe this answer much more).
'lamb'+'s'='LAMBS'

Can you help me to learn more?

(Other definitions for lambs that I've seen before include "Young sheep" , "See 17" .)
