Crossword Genius

Fantasy blue dish? (3,2,3,3)

Ross

I believe the answer is:

pie in the sky

I'm a little stuck... Click here to teach me more about this clue!

'fantasy' is the definition.
(I've seen this before)

'blue dish?' is the wordplay.
I cannot quite understand how this works, but
'blue' could be 'sky' (sky blue is a shade of blue) and 'sky' is found in the answer.
'dish?' could be 'pie' (I've seen this before) and 'pie' is located in the answer.
The remaining letters 'inthe' is a valid word which might be clued in a way I don't understand.
This may be the basis of the clue (or it may be nonsense).

Can you help me to learn more?

(Other definitions for pie in the sky that I've seen before include "Dream" , "Inkiest hype (anag.)" , "False optimism" , "An improbable future benefit" , "empty wish" .)

I've seen this clue in The Telegraph.
