I believe the answer is:

ice-blue

'finish' is the definition.
I don't know anything about this answer so I cannot tell whether it can be defined by this definition.

'off a fight in colour' is the wordplay.
I cannot quite see how this works, but
'off' could be 'ice' (I've seen this in another clue) and 'ice' is located in the answer.
'colour' could be 'blue' (blue is a colour) and 'blue' is present in the answer.
This accounts for all the letters.
This may be the basis of the clue (or it may be nonsense).

Can you help me to learn more?

I've seen this clue in the Sydney Morning Herald.
