Although both the answer and definition are singular nouns, I can't understand how one could define the other.

'ugly woman for cheese' is the wordplay.
'ugly woman' becomes 'zola' (I am not sure about the 'ugly' bit.).
'for' means one lot of letters go next to another (I've seen this in other clues).
'cheese' becomes 'gorgon' (I have seen 'Italian cheese ' mean 'gorgon' so perhaps 'cheese' could also mean 'gorgon').
'zola' put after 'gorgon' is 'GORGONZOLA'.
