Although both the answer and definition are singular nouns, I cannot understand how they can define each other.

'give opinion on drink' is the wordplay.
'give opinion on' becomes 'air' (I am not sure about this - if you are sure you should believe this answer much more).
'drink' becomes 'port' (port is a kind of drink).
'air'+'port'='AIRPORT'

'served in' acts as a link.
