'greek character' is the definition.
(letter from the Greek alphabet)

'records lion one moving west' is the wordplay.
I cannot quite see how this works, but
'records' could be 'eps' (EP is a type of record) and 'eps' is found within the answer.
an anagram of 'lion' is 'ilon' which is present in the answer.
This accounts for all the letters.
This explanation may well be incorrect...

Can you help me to learn more?

(Other definitions for epsilon that I've seen before include "foreign letter" , "Fifth brightest star in a constellation" , "Foreign character" , "character in Greece" , "Greek character" .)

I've seen this clue in The Telegraph.
