'stitching' becomes 'seam' (I can't justify this - if you can you should believe this answer much more).
'up' says the letters should be written in reverse (in down clue: letters go upwards).
'sort'+'seam'='sortseam'
'sortseam' in reverse letter order is 'MAESTROS'.
