Crossword Genius

Iron is distributed around length of steal (7)

Ross

I believe the answer is:

sirloin

I'm a little stuck... Click here to teach me more about this clue!

'steal' is the definition.
Although both the answer and definition are singular nouns, I cannot understand how one could define the other.

'iron is distributed around length' is the wordplay.
'distributed' is an anagram indicator.
'around' means one lot of letters goes inside another.
'length' becomes 'l' (abbreviation in geometry).
'iron'+'is'='ironis'
'ironis' anagrammed gives 'siroin'.
'siroin' placed around 'l' is 'SIRLOIN'.

'of' is the link.

(Other definitions for sirloin that I've seen before include "Upper part of loin of beef" , "Prime cut of beef" , "Quality cut of beef loin" , "Good cut of beef" , "(Knighted?) cut of meat" .)

I've seen this clue in the Sydney Morning Herald.
