Crossword Genius

It can also be eaten on the water (5)

Ross

I believe the answer is:

melon

I'm a little stuck... Click here to teach me more about this clue!

'water' is the definition.
Although both the answer and definition are singular nouns, I don't understand how one could define the other.

'it can also be eaten on' is the wordplay.
'it' becomes 'e' ('e' can mean 'electronic' which is similar to 'IT').
'can also' becomes 'ml' (I am not sure about this - if you are sure you should believe this answer much more).
'be eaten' is an insertion indicator (some letters have eaten others).
'e' placed within 'ml' is 'mel'.
'mel'+'on'='MELON'

'the' acts as a link.

Can you help me to learn more?

(Other definitions for melon that I've seen before include "Killing" , "Sweet juicy fruit" , "I'm very seedy" , "Cantaloupe fruit" , "Large round fruit" .)

I've seen this clue in the Evening Standard.
