I can't judge whether this definition defines the answer.

'turn to open the wine' is the wordplay.
'turn' becomes 'screw' (I have seen 'fast turn' mean 'screw' so perhaps 'turn' could also mean 'screw').
'to' says to put letters next to each other (I've seen this in other clues).
'open the wine' becomes 'cork' (I can't explain this - if you can you should believe this answer much more).
'screw' after 'cork' is 'CORKSCREW'.
