(I've seen this in another clue)

'copy probing case of sabotage?' is the wordplay.
'copy' becomes 'crib' (crib can mean to copy from another source).
'probing' means one lot of letters goes inside another (probe can mean to make a hole in).
'case of' says to hollow out the word (remove centre letters) (outsides of).
'sabotage' with its middle removed is 'se'.
'crib' going inside 'se' is 'SCRIBE'.

(Other definitions for scribe that I've seen before include "Score" , "Copyist; Jewish scholar once" , "One used to copy out documents" , "Ancient copyist of manuscripts" , "Former document copier" .)
