'left accepting bishop' is the wordplay.
'left' becomes 'uneaten' (I've seen this before).
'accepting' indicates putting letters inside (inserted letters are accepted).
'bishop' becomes 'B' (chess abbreviation).
'uneaten' placed around 'b' is 'UNBEATEN'.
