'one kind of meat' becomes 'lean' (I've seen this in another clue).
'sent back' shows that the letters should be reversed in order.
'another kind' becomes 'red' (I can't explain this - if you can you should give a lot more credence to this answer).
'red' written backwards gives 'der'.
'lean'+'der'='LEANDER'
