'male cat' becomes 'tom' (I've seen this in another clue).
'and' says to put letters next to each other.
'sheep' becomes 'ram' (male sheep).
'turned up' shows that the letters should be reversed in order.
'tom'+'ram'='tomram'
'tomram' reversed gives 'MARMOT'.
