(I know that moderate can be written as temperate)

'anger at end of voyage' is the wordplay.
'anger' becomes 'temper' (temper is a kind of anger).
'end of' says to take the final letters.
The last letter of 'voyage' is 'e'.
'temper'+'at'+'e'='TEMPERATE'

(Other definitions for temperate that I've seen before include "Controlled" , "Moderate, mild" , "benign" , "even" , "Showing moderation" .)
