I cannot really see how this works, but
'from' could be 'in' (I've seen this in other clues) and 'in' is located in the answer.
'a' is found in the answer.
This may be the basis of clue (or it may be nonsense).

(Other definitions for au gratin that I've seen before include "Covered with breadcrumbs or grated cheese" , "Of cooking, done with crust of melted cheese" , "Like some dishes" , "baked with a coating of breadcrumbs" , "Of food dish, cooked with crust of melted cheese" .)
