Crossword Genius

Once more with sheep – tails docked (4)

Ross

I believe the answer is:

anew

I'm a little stuck... Click here to teach me more about this clue!

'once more' is the definition.
(I've seen this in another clue)

'with sheep tails docked' is the wordplay.
I cannot quite understand how this works, but
'with' could be 'w' (abbreviation) and 'w' is found in the answer.
The remaining letters 'ane' is a valid word which might be clued in a way I don't understand.
This may be the basis of the clue (or it may be nonsense).

Can you help me to learn more?

(Other definitions for anew that I've seen before include "Afresh" , "From the beginning again" , "Wane in a different way, again" , "Once more (poetic)" , "Again but differently" .)

I've seen this clue in The Sun.
