Although both the answer and definition are singular nouns, I cannot understand how they can define each other.

'an assortment scoffs a fruit' is the wordplay.
'an assortment scoffs' becomes 'mandarin' (I can't explain this - if you can you should give a lot more credence to this answer).
'a fruit' becomes 'orange' (orange is a kind of fruit).
'mandarin'+'orange'='MANDARIN ORANGE'

(Another definition for mandarin orange that I've seen is " Chinese round stove in which there's fruit".)
