Although both the answer and definition are singular nouns, I don't see how one could define the other.

'poorly-mounted knight's day going perfectly limiting steer' is the wordplay.
I cannot quite see how this works, but
'day' could be 'd' (abbreviation for day) and 'd' is found within the answer.
'going' could be 'on' (both can mean functioning or activated) and 'on' is present in the answer.
The remaining letters 'quixote' is a valid word which might be clued in a way I don't see.
This explanation may well be incorrect...
