'preserve' becomes 'can' (canning is a kind of preserving).
'form of service in honour' becomes 'lett' (I can't justify this - if you can you should give a lot more credence to this answer).
'of' becomes 'o''.
'can'+'a'+'lett'+'o'='CANALETTO'
