Although both the answer and definition are plural nouns, I can't understand how they can define each other.

'prominent economist defending' is the wordplay.
'prominent' becomes 'sto' (I can't justify this - if you can you should give a lot more credence to this answer).
'economist' becomes 'keynes' (Keynes is an example).
'defending' means one lot of letters goes inside another (inserted letters are defended).
'sto' placed into 'keynes' is 'KEYSTONES'.

'very' acts as a link.

Can you help me to learn more?

(Another definition for keystones that I've seen is " They are central to arches".)
