I believe the answer is:
starve
'food' is the definition.
(I have seen 'Lack food ' mean 'starve' so perhaps 'food' could also mean 'starve')
'rodents on the rise over exposed' is the wordplay.
'rodents' becomes 'rats' (rat is a kind of rodent).
'on the rise' shows that the letters should be reversed in order.
'exposed' says to take the centre (outside letters removed).
The middle of 'over' is 've'.
'rats' backwards is 'star'.
'star'+'ve'='STARVE'
'deny them' is the link.
