'could be done easily' is the wordplay.
'could be' indicates anagramming the letters.
'done'+'easily'='doneeasily'
'doneeasily' with letters rearranged gives 'LAID EYES ON'.
'that' is the link.
(Another definition for laid eyes on that I've seen is " saw".)
