bisect

(to bisect is to split into two parts)

'taste' becomes 'bit' (bit is a kind of taste).
'as some wines' becomes 'sec' (some wines are described as sec, ie dry).
'drunk' indicates putting letters inside (inserted letters are drunk in).
'bit' enclosing 'sec' is 'BISECT'.
