Although both the answer and definition are singular nouns, I don't understand how one could define the other.

'claret served up containing some ice' is the wordplay.
'claret' becomes 'red' (red wine).
'served up' says the letters should be written backwards (in a down clue, going upwards).
'containing' indicates putting letters inside.
'some ice' becomes 'rink' (I can't justify this - if you can you should give a lot more credence to this answer).
'red' backwards is 'der'.
'der' placed around 'rink' is 'DRINKER'.

'have' acts as a link.
