'shrub with white not red' is the wordplay.
'shrub' becomes 'holly' (I have seen 'Prickly shrub ' mean 'holly' so perhaps 'shrub' could also mean 'holly').
'with' says to put letters next to each other.
'white not red' becomes 'hock' (white wine).
'holly'+'hock'='HOLLYHOCK'

(Other definitions for hollyhock that I've seen before include "A bloomer" , "blooming great" , "Plant with stout, hairy stems and spiky flowers" , "Christmas decoration" , "Tall country garden flower" .)
