Crossword Genius

Skipping starter of seafood, getting in a little red aperitif (7)

Ross

I believe the answer is:

campari

'aperitif' is the definition.
(I have seen 'Pinkish aperitif ' mean 'campari' so perhaps 'aperitif' could also mean 'campari')

'skipping starter of seafood getting in a little red' is the wordplay.
'skipping starter of' means to remove the first letter (I've seen 'skipping starters' mean this).
'seafood' becomes 'scampi' (I've seen this before).
'getting in' is an insertion indicator.
'little' says to take the initial letters.
The initial letter of 'red' is 'r'.
'scampi' with its initial letter removed is 'campi'.
'a'+'r'='ar'
'campi' placed around 'ar' is 'CAMPARI'.

(Other definitions for campari that I've seen before include "Pinkish aperitif" , "Red, bitter-sweet Italian aperitif" , "bitter drink" , "Mildly bitter aperitif, often drunk with soda" .)

I've seen this clue in The Everyman puzzle in The Observer.
