Maybe there's an association between them I don't understand?

'strike' becomes 'beat' (I've seen this before).
'and' means one lot of letters go next to another.
'then hide' becomes 'skin' (a hide is an animal skin. I am not sure about the 'then' bit.).
'over' shows that the letters should be reversed in order.
'skin' back-to-front is 'niks'.
'beat'+'niks'='BEATNIKS'
